Ingredients:

  • 500g potato
  • 200g broccoli
  • 200g carrot
  • 150g cheese
  • 2 cloves garlic
  • 200ml milk
  • 50g butter
  • 1 onion

Instructions:

  1. Preheat the oven to 180°C (356°F).
  2. Peel and slice the potatoes thinly. Boil them in salted water until just tender, then drain.
  3. In a skillet, melt butter over medium heat. Add chopped onion and minced garlic, cooking until softened.
  4. Add chopped broccoli and sliced carrots to the skillet, cooking for a few minutes until they are slightly tender.
  5. In a baking dish, layer half of the potatoes, followed by the vegetable mixture, and then the remaining potatoes.
  6. Pour milk over the top and sprinkle with cheese.
  7. Cover the dish with aluminum foil and bake for 30 minutes. Then remove the foil and bake for an additional 15 minutes until the cheese is golden and bubbly.
