Cheesy Vegetable Casserole

Ingredients:
- 500g potato
- 200g broccoli
- 200g carrot
- 150g cheese
- 2 cloves garlic
- 200ml milk
- 50g butter
- 1 onion
Instructions:
- Preheat the oven to 180°C (356°F).
- Peel and slice the potatoes thinly. Boil them in salted water until just tender, then drain.
- In a skillet, melt butter over medium heat. Add chopped onion and minced garlic, cooking until softened.
- Add chopped broccoli and sliced carrots to the skillet, cooking for a few minutes until they are slightly tender.
- In a baking dish, layer half of the potatoes, followed by the vegetable mixture, and then the remaining potatoes.
- Pour milk over the top and sprinkle with cheese.
- Cover the dish with aluminum foil and bake for 30 minutes. Then remove the foil and bake for an additional 15 minutes until the cheese is golden and bubbly.
