A delicious and hearty cheesy vegetable casserole that combines a variety of nutritious vegetables and creamy cheese, perfect for a family meal or a cozy gathering.

Ingredients:

  • 2 cups of potato, sliced
  • 1 cup of carrot, sliced
  • 1 cup of broccoli, florets
  • 2 cloves of garlic, minced
  • 200g of cheese, grated
  • 200ml of milk
  • 1 tablespoon of butter
  • Salt to taste
  • Pepper to taste

Instructions:

  1. Preheat the oven to 180°C (350°F).
  2. In a large pot, bring water to a boil and add the sliced potatoes and carrots. Cook for about 5 minutes until slightly tender, then drain.
  3. In a baking dish, layer the cooked potatoes and carrots along with the broccoli florets.
  4. In a small saucepan, melt the butter and sauté the minced garlic until fragrant. Add the milk and half of the grated cheese, stirring until the cheese is melted and the mixture is creamy.
  5. Pour the cheese sauce over the vegetable layers, ensuring even coverage.
  6. Top with the remaining grated cheese and season with salt and pepper.
  7. Bake in the preheated oven for about 25-30 minutes, or until the cheese is bubbling and golden brown.
  8. Let it cool slightly before serving.
