A delicious and hearty Cheesy Vegetable Casserole, perfect for a comforting dinner or as a side dish. Loaded with fresh vegetables and creamy cheese, this casserole is sure to satisfy everyone at the table!

Ingredients:

  • 2 medium potatoes, diced
  • 1 large carrot, sliced
  • 1 onion, chopped
  • 200g broccoli florets
  • 200g spinach
  • 200g cheese, grated
  • 200ml cream
  • 2 cloves garlic, minced
  • 1 tablespoon butter
  • Salt and pepper to taste

Instructions:

  1. Preheat your oven to 180°C (350°F).
  2. In a large pot, bring salted water to a boil and cook the diced potatoes until tender, about 10 minutes. Drain and set aside.
  3. In a skillet, melt the butter over medium heat. Add the chopped onion and minced garlic, sauté until fragrant and translucent.
  4. Add the sliced carrots and broccoli florets to the skillet, cooking for an additional 5 minutes.
  5. Stir in the spinach until wilted, then season with salt and pepper.
  6. In a large mixing bowl, combine the cooked potatoes, sautéed vegetable mixture, cream, and half of the grated cheese. Mix well to combine.
  7. Transfer the mixture to a baking dish, spreading it evenly. Sprinkle the remaining cheese on top.
  8. Bake in the preheated oven for 25-30 minutes, until the top is golden and bubbly.
