Cheesy Vegetable Casserole

Ingredients:
- 2 medium potatoes, diced
- 1 large carrot, sliced
- 1 onion, chopped
- 200g broccoli florets
- 200g spinach
- 200g cheese, grated
- 200ml cream
- 2 cloves garlic, minced
- 1 tablespoon butter
- Salt and pepper to taste
Instructions:
- Preheat your oven to 180°C (350°F).
- In a large pot, bring salted water to a boil and cook the diced potatoes until tender, about 10 minutes. Drain and set aside.
- In a skillet, melt the butter over medium heat. Add the chopped onion and minced garlic, sauté until fragrant and translucent.
- Add the sliced carrots and broccoli florets to the skillet, cooking for an additional 5 minutes.
- Stir in the spinach until wilted, then season with salt and pepper.
- In a large mixing bowl, combine the cooked potatoes, sautéed vegetable mixture, cream, and half of the grated cheese. Mix well to combine.
- Transfer the mixture to a baking dish, spreading it evenly. Sprinkle the remaining cheese on top.
- Bake in the preheated oven for 25-30 minutes, until the top is golden and bubbly.
