Ingredients:

  • 2 medium potatoes, sliced
  • 1 zucchini, sliced
  • 1 carrot, sliced
  • 1 cup broccoli florets
  • 1 cup cheese, shredded
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 tablespoons butter
  • 1 cup milk
  • Salt and pepper to taste

Instructions:

  1. Preheat the oven to 200°C (400°F).
  2. In a large skillet, melt the butter over medium heat. Add the chopped onion and minced garlic, cooking until soft.
  3. Add the sliced potatoes, zucchini, and carrot to the skillet, stirring for a few minutes.
  4. Add the broccoli florets and season with salt and pepper. Stir in the milk and half of the shredded cheese, cooking until the cheese is melted and everything is combined.
  5. Transfer the mixture into a baking dish and top with the remaining cheese.
  6. Bake for 25-30 minutes or until the top is golden and bubbly. Let it cool slightly before serving.
