Cheesy Vegetable Casserole
A delicious and hearty cheesy vegetable casserole made with an assortment of fresh veggies, pasta, and creamy cheese. Perfect for a comforting meal!
Ingredients:
- 250g pasta
- 2 carrots, grated
- 1 zucchini, diced
- 1 onion, chopped
- 2 cloves garlic, minced
- 200g broccoli florets
- 200g cheese, shredded
- 500ml milk
- 2 tablespoons butter
- Salt and pepper to taste
- 100g peas
Instructions:
- Preheat the oven to 180°C.
- Cook the pasta according to package instructions until al dente. Drain and set aside.
- In a large skillet, melt the butter over medium heat. Add the onion and garlic, sauté until soft and fragrant.
- Add the grated carrot, diced zucchini, and broccoli florets to the skillet. Cook for about 5-7 minutes until the veggies begin to soften.
- In a large bowl, combine the cooked pasta, sautéed vegetables, milk, and half of the shredded cheese. Stir well to combine.
- Season with salt and pepper to taste, then transfer the mixture to a greased baking dish.
- Top with the remaining shredded cheese and sprinkle the peas on top.
- Bake in the preheated oven for 25-30 minutes, or until the cheese is bubbly and golden brown.
- Let it cool slightly before serving.
