Cheesy Vegetable Casserole

A delicious and hearty cheesy vegetable casserole made with an assortment of fresh veggies, pasta, and creamy cheese. Perfect for a comforting meal!

Ingredients:

  • 250g pasta
  • 2 carrots, grated
  • 1 zucchini, diced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 200g broccoli florets
  • 200g cheese, shredded
  • 500ml milk
  • 2 tablespoons butter
  • Salt and pepper to taste
  • 100g peas

Instructions:

  1. Preheat the oven to 180°C.
  2. Cook the pasta according to package instructions until al dente. Drain and set aside.
  3. In a large skillet, melt the butter over medium heat. Add the onion and garlic, sauté until soft and fragrant.
  4. Add the grated carrot, diced zucchini, and broccoli florets to the skillet. Cook for about 5-7 minutes until the veggies begin to soften.
  5. In a large bowl, combine the cooked pasta, sautéed vegetables, milk, and half of the shredded cheese. Stir well to combine.
  6. Season with salt and pepper to taste, then transfer the mixture to a greased baking dish.
  7. Top with the remaining shredded cheese and sprinkle the peas on top.
  8. Bake in the preheated oven for 25-30 minutes, or until the cheese is bubbly and golden brown.
  9. Let it cool slightly before serving.
