Cheesy Vegetable Casserole
A comforting Cheesy Vegetable Casserole packed with nutritious veggies like potato, broccoli, and carrot. It's creamy, cheesy, and perfect for a family dinner or potluck!
Ingredients:
- 500g potatoes, peeled and diced
- 200g broccoli florets
- 150g carrots, sliced
- 200g cheese, grated
- 250ml milk
- 60g butter
- salt to taste
- pepper to taste
- 1 teaspoon garlic, minced
Instructions:
- Preheat the oven to 180°C (350°F).
- In a pot of salted boiling water, cook the diced potatoes for about 10 minutes until slightly tender. Drain and set aside.
- In the same pot, blanch the broccoli florets and carrot slices for 3-4 minutes until bright and tender. Drain and set aside.
- In a saucepan, melt the butter over medium heat. Add minced garlic and sauté for about a minute until fragrant.
- Stir in the milk and half of the grated cheese, stirring until melted and combined. Season with salt and pepper to taste.
- In a large baking dish, layer the cooked potatoes, broccoli, and carrots. Pour the cheese sauce over the top, making sure to cover all the vegetables. Sprinkle the remaining cheese on top.
- Bake in the preheated oven for 25-30 minutes until bubbly and golden on top.
