Cheesy Vegetable Casserole

A comforting Cheesy Vegetable Casserole packed with nutritious veggies like potato, broccoli, and carrot. It's creamy, cheesy, and perfect for a family dinner or potluck!

Ingredients:

  • 500g potatoes, peeled and diced
  • 200g broccoli florets
  • 150g carrots, sliced
  • 200g cheese, grated
  • 250ml milk
  • 60g butter
  • salt to taste
  • pepper to taste
  • 1 teaspoon garlic, minced

Instructions:

  1. Preheat the oven to 180°C (350°F).
  2. In a pot of salted boiling water, cook the diced potatoes for about 10 minutes until slightly tender. Drain and set aside.
  3. In the same pot, blanch the broccoli florets and carrot slices for 3-4 minutes until bright and tender. Drain and set aside.
  4. In a saucepan, melt the butter over medium heat. Add minced garlic and sauté for about a minute until fragrant.
  5. Stir in the milk and half of the grated cheese, stirring until melted and combined. Season with salt and pepper to taste.
  6. In a large baking dish, layer the cooked potatoes, broccoli, and carrots. Pour the cheese sauce over the top, making sure to cover all the vegetables. Sprinkle the remaining cheese on top.
  7. Bake in the preheated oven for 25-30 minutes until bubbly and golden on top.
