Cheesy Vegetable Casserole
A delicious and hearty cheesy vegetable casserole made with nutritious ingredients like potatoes, carrots, and zucchini. Perfect for a comforting family meal!
Ingredients:
- 500g potatoes
- 200g carrots
- 300g zucchini
- 150g cheese
- 2 cloves garlic
- 1 onion
- 200ml milk
- 30g butter
- Salt to taste
- Pepper to taste
Instructions:
- Preheat the oven to 180°C (350°F).
- Peel and chop the potatoes and carrots into small cubes.
- Slice the zucchini and onion thinly, and mince the garlic.
- In a pot, melt the butter over medium heat and sauté the onion and garlic until translucent.
- Add the carrots and potatoes, cook for about 5 minutes, and then add the zucchini.
- Pour in the milk, season with salt and pepper, and stir well.
- Transfer the vegetable mixture into a greased baking dish.
- Top with shredded cheese evenly over the vegetables.
- Bake in the preheated oven for 25-30 minutes, or until the cheese is melted and golden brown.
- Let it cool for a few minutes before serving.
