Cheesy Vegetable Casserole

Ingredients:
- 3 medium potatoes, peeled and sliced
- 2 carrots, sliced
- 2 cups spinach, chopped
- 1 onion, diced
- 2 cloves garlic, minced
- 200g cheese, grated
- 2 tablespoons butter
- Salt and pepper to taste
- 1 teaspoon dried thyme
Instructions:
- Preheat the oven to 180°C.
- In a large pot, boil the sliced potatoes and carrots until tender, about 10-15 minutes. Drain and set aside.
- In a frying pan, melt the butter over medium heat. Add the diced onion and minced garlic; sauté until the onion is translucent.
- Add the cooked potatoes and carrots to the frying pan. Stir in the chopped spinach, salt, pepper, and thyme.
