Ingredients:

  • 3 medium potatoes, peeled and sliced
  • 2 carrots, sliced
  • 2 cups spinach, chopped
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 200g cheese, grated
  • 2 tablespoons butter
  • Salt and pepper to taste
  • 1 teaspoon dried thyme

Instructions:

  1. Preheat the oven to 180°C.
  2. In a large pot, boil the sliced potatoes and carrots until tender, about 10-15 minutes. Drain and set aside.
  3. In a frying pan, melt the butter over medium heat. Add the diced onion and minced garlic; sauté until the onion is translucent.
  4. Add the cooked potatoes and carrots to the frying pan. Stir in the chopped spinach, salt, pepper, and thyme.
  5. Transfer the mixture to a baking dish. Top with grated cheese evenly over the vegetables.
  6. Bake in the preheated oven for 25-30 minutes or until the cheese is bubbly and golden brown.
