Cheesy Vegetable Casserole

A hearty and comforting cheesy vegetable casserole packed with nutritious vegetables and topped with melty cheese.

Ingredients:

  • 400g potatoes
  • 200g broccoli
  • 150g carrots
  • 150g cheese
  • 2 cloves garlic
  • 100ml milk
  • 50g butter
  • 1 onion
  • salt
  • pepper

Instructions:

  1. Preheat the oven to 180°C (350°F).
  2. Peel and slice the potatoes into thin rounds. Cook them in boiling salted water for about 5-7 minutes until slightly tender, then drain.
  3. Chop the broccoli into florets and cook them in boiling water for 3-4 minutes until vibrant green. Drain and set aside.
  4. In a pan, melt the butter over medium heat. Add chopped onion and minced garlic, and sauté until softened.
  5. In a large bowl, combine the potatoes, broccoli, sautéed onions and garlic. Season with salt and pepper to taste.
  6. Transfer the mixture to a greased baking dish. Pour milk evenly over the top and sprinkle cheese generously over everything.
  7. Bake in the preheated oven for 25-30 minutes until the top is golden and bubbling.
  8. Let it cool slightly before serving.
