Cheesy Vegetable Casserole
A hearty and comforting cheesy vegetable casserole packed with nutritious vegetables and topped with melty cheese.
Ingredients:
- 400g potatoes
- 200g broccoli
- 150g carrots
- 150g cheese
- 2 cloves garlic
- 100ml milk
- 50g butter
- 1 onion
- salt
- pepper
Instructions:
- Preheat the oven to 180°C (350°F).
- Peel and slice the potatoes into thin rounds. Cook them in boiling salted water for about 5-7 minutes until slightly tender, then drain.
- Chop the broccoli into florets and cook them in boiling water for 3-4 minutes until vibrant green. Drain and set aside.
- In a pan, melt the butter over medium heat. Add chopped onion and minced garlic, and sauté until softened.
- In a large bowl, combine the potatoes, broccoli, sautéed onions and garlic. Season with salt and pepper to taste.
- Transfer the mixture to a greased baking dish. Pour milk evenly over the top and sprinkle cheese generously over everything.
- Bake in the preheated oven for 25-30 minutes until the top is golden and bubbling.
- Let it cool slightly before serving.
