Cheesy Vegetable Casserole
A scrumptious cheesy vegetable casserole packed with a variety of nutritious veggies, making it a comforting, hearty dish perfect for family dinners.
Ingredients:
- 500g potatoes
- 300g carrots
- 200g broccoli
- 200g cheese
- 200ml milk
- 100g onions
- 50g butter
- salt
- pepper
Instructions:
- Preheat your oven to 180°C (350°F).
- Peel and chop the potatoes and carrots into bite-sized pieces.
- In a large pot, boil the potatoes and carrots for about 10 minutes until slightly tender.
- Drain the vegetables and set aside.
- In a pan, melt butter over medium heat and sauté chopped onions until translucent.
- Add the broccoli to the onions and cook for another 5 minutes.
- In a mixing bowl, combine the boiled potatoes, carrots, and broccoli mixture. Pour in the milk and mix in grated cheese. Season with salt and pepper to taste.
- Transfer the mixture into a greased casserole dish.
- Top the casserole with more cheese if desired and bake in the preheated oven for 25-30 minutes or until golden brown.
- Let it cool for a few minutes before serving.
