A scrumptious cheesy vegetable casserole packed with a variety of nutritious veggies, making it a comforting, hearty dish perfect for family dinners.

Ingredients:

  • 500g potatoes
  • 300g carrots
  • 200g broccoli
  • 200g cheese
  • 200ml milk
  • 100g onions
  • 50g butter
  • salt
  • pepper

Instructions:

  1. Preheat your oven to 180°C (350°F).
  2. Peel and chop the potatoes and carrots into bite-sized pieces.
  3. In a large pot, boil the potatoes and carrots for about 10 minutes until slightly tender.
  4. Drain the vegetables and set aside.
  5. In a pan, melt butter over medium heat and sauté chopped onions until translucent.
  6. Add the broccoli to the onions and cook for another 5 minutes.
  7. In a mixing bowl, combine the boiled potatoes, carrots, and broccoli mixture. Pour in the milk and mix in grated cheese. Season with salt and pepper to taste.
  8. Transfer the mixture into a greased casserole dish.
  9. Top the casserole with more cheese if desired and bake in the preheated oven for 25-30 minutes or until golden brown.
  10. Let it cool for a few minutes before serving.
