Cheesy Vegetable Casserole
A delicious and hearty casserole packed with vegetables and topped with a cheesy crust, perfect for a comforting family meal.
Ingredients:
- 2 carrots, sliced
- 3 potatoes, diced
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 zucchini, sliced
- 200g broccoli florets
- 200g cheese, grated
- 50g butter
- 200ml milk
- salt
- pepper
Instructions:
- Preheat the oven to 180°C (350°F).
- In a large pot, melt the butter over medium heat. Add the onion and garlic, sautéing until translucent.
- Add the carrots, potatoes, zucchini, and broccoli to the pot. Season with salt and pepper, and stir to combine. Cook for about 5 minutes, just to soften the vegetables slightly.
- In a separate bowl, mix the milk and half of the grated cheese together.
- In a baking dish, layer the sautéed vegetables, then pour the cheesy milk mixture over them.
- Sprinkle the remaining cheese on top of the casserole.
- Bake in the preheated oven for 30-35 minutes, or until the cheese is bubbly and golden brown.
