Cheesy Vegetable Casserole

A delicious and hearty casserole packed with vegetables and topped with a cheesy crust, perfect for a comforting family meal.

Ingredients:

  • 2 carrots, sliced
  • 3 potatoes, diced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 zucchini, sliced
  • 200g broccoli florets
  • 200g cheese, grated
  • 50g butter
  • 200ml milk
  • salt
  • pepper

Instructions:

  1. Preheat the oven to 180°C (350°F).
  2. In a large pot, melt the butter over medium heat. Add the onion and garlic, sautéing until translucent.
  3. Add the carrots, potatoes, zucchini, and broccoli to the pot. Season with salt and pepper, and stir to combine. Cook for about 5 minutes, just to soften the vegetables slightly.
  4. In a separate bowl, mix the milk and half of the grated cheese together.
  5. In a baking dish, layer the sautéed vegetables, then pour the cheesy milk mixture over them.
  6. Sprinkle the remaining cheese on top of the casserole.
  7. Bake in the preheated oven for 30-35 minutes, or until the cheese is bubbly and golden brown.
