Cheesy Vegetable Casserole
A hearty and delicious cheesy vegetable casserole made with fresh vegetables and cheese, perfect for a comforting family meal.
Ingredients:
- 2 carrots, diced
- 3 potatoes, diced
- 1 onion, chopped
- 2 cloves garlic, minced
- 2 zucchinis, sliced
- 200g broccoli florets
- 300g cheese, shredded
- 200ml milk
- 50g butter
- Salt and pepper to taste
Instructions:
- Preheat the oven to 180°C (350°F).
- In a large pot, bring salted water to a boil and add the diced potatoes and carrots. Cook for about 8-10 minutes until slightly tender. Drain and set aside.
- In a skillet, melt the butter over medium heat. Add the chopped onion and minced garlic, sautéing until translucent.
- Stir in the sliced zucchinis and broccoli florets, cooking for an additional 5 minutes until tender. Season with salt and pepper.
- In a large mixing bowl, combine the cooked vegetables, milk, and shredded cheese. Mix well until combined and creamy.
- Transfer the mixture to a greased baking dish and spread evenly.
- Sprinkle additional cheese on top if desired, then bake in the preheated oven for 25-30 minutes or until golden and bubbly.
