A hearty and delicious cheesy vegetable casserole made with fresh vegetables and cheese, perfect for a comforting family meal.

Ingredients:

  • 2 carrots, diced
  • 3 potatoes, diced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 zucchinis, sliced
  • 200g broccoli florets
  • 300g cheese, shredded
  • 200ml milk
  • 50g butter
  • Salt and pepper to taste

Instructions:

  1. Preheat the oven to 180°C (350°F).
  2. In a large pot, bring salted water to a boil and add the diced potatoes and carrots. Cook for about 8-10 minutes until slightly tender. Drain and set aside.
  3. In a skillet, melt the butter over medium heat. Add the chopped onion and minced garlic, sautéing until translucent.
  4. Stir in the sliced zucchinis and broccoli florets, cooking for an additional 5 minutes until tender. Season with salt and pepper.
  5. In a large mixing bowl, combine the cooked vegetables, milk, and shredded cheese. Mix well until combined and creamy.
  6. Transfer the mixture to a greased baking dish and spread evenly.
  7. Sprinkle additional cheese on top if desired, then bake in the preheated oven for 25-30 minutes or until golden and bubbly.
  8. Let it cool for a few minutes before serving. Enjoy!
