Ingredients:

  • 2 carrots, diced
  • 3 potatoes, peeled and cubed
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 200g cheese, grated
  • 1 cup milk
  • 2 tablespoons butter
  • Salt and pepper to taste

Instructions:

  1. Preheat the oven to 180°C.
  2. In a large pot, boil the potatoes and carrots until tender, about 10 minutes. Drain and set aside.
  3. In a separate pan, melt butter over medium heat. Add the onion and garlic, and sauté until soft and fragrant.
  4. Combine the boiled potatoes and carrots with the sautéed onions and garlic in a large mixing bowl. Season with salt and pepper.
  5. In a baking dish, layer the vegetable mixture, then pour the milk over the top, followed by the grated cheese.
  6. Bake in the oven for about 25-30 minutes, or until the cheese is golden and bubbly.
