Ingredients:

  • 2 carrots, sliced
  • 2 potatoes, diced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 tomatoes, diced
  • 1 zucchini, sliced
  • 200g cheese, grated
  • 200ml milk
  • 2 tablespoons butter
  • Salt and pepper to taste

Instructions:

  1. Preheat the oven to 180°C (350°F).
  2. In a large skillet, melt the butter over medium heat. Add the onion and garlic, and sauté until soft.
  3. Add the carrots, potatoes, zucchini, and tomatoes to the skillet. Cook for about 10 minutes until the vegetables are slightly tender.
  4. In a greased baking dish, layer the cooked vegetables. Pour the milk over the top and sprinkle with grated cheese.
  5. Season with salt and pepper to taste.
  6. Bake in the preheated oven for 30-35 minutes until the cheese is golden and bubbly.
