Cheesy Vegetable Casserole

A delicious and hearty Cheesy Vegetable Casserole packed with healthy vegetables and topped with melted cheese. Perfect for a comforting meal!

Ingredients:

  • 1 large potato, sliced
  • 2 carrots, diced
  • 1 onion, chopped
  • 3 mushrooms, sliced
  • 200g broccoli florets
  • 150ml milk
  • 200g cheese, grated
  • 2 tablespoons butter
  • Salt and pepper to taste

Instructions:

  1. Preheat the oven to 180°C.
  2. In a large pot of boiling salted water, cook the sliced potatoes for about 5 minutes until slightly tender. Drain and set aside.
  3. In the same pot, sauté onions and carrots in butter until soft.
  4. Add the sliced mushrooms and broccoli florets, cooking until they are tender.
  5. In a baking dish, layer the potato slices and the vegetable mixture.
  6. Pour the milk evenly over the vegetables.
  7. Top with grated cheese and season with salt and pepper.
  8. Cover with foil and bake for 25 minutes, then remove the foil and bake for an additional 10 minutes until the cheese is golden and bubbly.
