Cheesy Vegetable Casserole
A delicious and hearty Cheesy Vegetable Casserole packed with healthy vegetables and topped with melted cheese. Perfect for a comforting meal!
Ingredients:
- 1 large potato, sliced
- 2 carrots, diced
- 1 onion, chopped
- 3 mushrooms, sliced
- 200g broccoli florets
- 150ml milk
- 200g cheese, grated
- 2 tablespoons butter
- Salt and pepper to taste
Instructions:
- Preheat the oven to 180°C.
- In a large pot of boiling salted water, cook the sliced potatoes for about 5 minutes until slightly tender. Drain and set aside.
- In the same pot, sauté onions and carrots in butter until soft.
- Add the sliced mushrooms and broccoli florets, cooking until they are tender.
- In a baking dish, layer the potato slices and the vegetable mixture.
- Pour the milk evenly over the vegetables.
- Top with grated cheese and season with salt and pepper.
- Cover with foil and bake for 25 minutes, then remove the foil and bake for an additional 10 minutes until the cheese is golden and bubbly.
