Cheesy Vegetable Casserole

A delightful and hearty cheesy vegetable casserole that combines the goodness of fresh vegetables and creamy cheese, perfect for a comforting meal.

Ingredients:

  • 3 medium potatoes, sliced
  • 2 carrots, sliced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 200g broccoli florets
  • 200g cauliflower florets
  • 200g cheese, shredded
  • 100ml milk
  • 50g butter
  • Salt and pepper to taste

Instructions:

  1. Preheat the oven to 180°C (350°F).
  2. In a large pot, bring water to a boil and add the potato, carrot, broccoli, and cauliflower. Blanch the vegetables for about 5 minutes, then drain.
  3. In a frying pan, melt the butter and sauté the onion and garlic until translucent.
  4. In a large mixing bowl, combine the blanched vegetables with the sautéed onion and garlic. Add salt and pepper to taste.
  5. Transfer the vegetable mixture to a baking dish.
  6. In a small bowl, mix the milk with half of the shredded cheese. Pour this mixture over the vegetables.
  7. Sprinkle the remaining cheese on top of the casserole.
  8. Bake in the preheated oven for 30-35 minutes, or until golden and bubbly on top.
