Cheesy Vegetable Casserole
A delightful and hearty cheesy vegetable casserole that combines the goodness of fresh vegetables and creamy cheese, perfect for a comforting meal.
Ingredients:
- 3 medium potatoes, sliced
- 2 carrots, sliced
- 1 onion, chopped
- 2 cloves garlic, minced
- 200g broccoli florets
- 200g cauliflower florets
- 200g cheese, shredded
- 100ml milk
- 50g butter
- Salt and pepper to taste
Instructions:
- Preheat the oven to 180°C (350°F).
- In a large pot, bring water to a boil and add the potato, carrot, broccoli, and cauliflower. Blanch the vegetables for about 5 minutes, then drain.
- In a frying pan, melt the butter and sauté the onion and garlic until translucent.
- In a large mixing bowl, combine the blanched vegetables with the sautéed onion and garlic. Add salt and pepper to taste.
- Transfer the vegetable mixture to a baking dish.
- In a small bowl, mix the milk with half of the shredded cheese. Pour this mixture over the vegetables.
- Sprinkle the remaining cheese on top of the casserole.
- Bake in the preheated oven for 30-35 minutes, or until golden and bubbly on top.
