A delicious and hearty Cheesy Vegetable Casserole made with layers of vegetables, creamy cheese, and a crunchy topping. Perfect for a comforting meal any time of the year!

Ingredients:

  • 300g potatoes
  • 200g zucchini
  • 150g broccoli
  • 100g cheese
  • 50g butter
  • 3 cloves garlic
  • 1 onion
  • 200ml milk
  • salt
  • pepper

Instructions:

  1. Preheat the oven to 180°C (350°F).
  2. Peel and slice the potatoes and place them in a pot of boiling water. Cook for 10 minutes and drain.
  3. In a skillet, melt the butter and sauté the chopped onion and minced garlic until fragrant.
  4. Add the sliced zucchini and broccoli florets to the skillet, cooking until just tender.
  5. In a greased casserole dish, layer the cooked potatoes, followed by the zucchini and broccoli mix.
  6. Pour the milk over the layered vegetables and sprinkle with cheese, salt, and pepper.
  7. Bake in the preheated oven for 30-35 minutes, until the top is golden and bubbly.
