Cheesy Vegetable Bake

A scrumptious cheesy vegetable bake that combines the goodness of carrots, potatoes, and onions, baked to perfection with creamy cheese and topped with a golden crust.

Ingredients:

  • 300g potatoes
  • 150g carrots
  • 100g onions
  • 200g cheese
  • 50g butter
  • 300ml milk
  • salt and pepper to taste
  • 1 tsp garlic powder
  • 1 tsp paprika

Instructions:

  1. Preheat the oven to 180°C (350°F).
  2. Peel and slice the potatoes and carrots into thin rounds.
  3. Chop the onions finely.
  4. In a buttered baking dish, layer the sliced potatoes, carrots, and onions.
  5. In a saucepan, melt butter and stir in the milk, garlic powder, paprika, salt, and pepper, then bring to a light simmer.
  6. Pour the milk mixture over the vegetable layers.
  7. Grate the cheese and sprinkle it generously on top of the vegetables.
  8. Cover the dish with aluminum foil and bake for 30 minutes.
  9. Remove the foil and bake for an additional 15 minutes or until the top is golden brown.
  10. Let it cool slightly before serving.
