Cheesy Vegetable Bake

A delightful and hearty cheesy vegetable bake, perfect for a family dinner, made with a blend of fresh vegetables and cheese, baked to perfection.

Ingredients:

  • 2 carrots, sliced
  • 2 potatoes, diced
  • 1 onion, chopped
  • 2 cloves of garlic, minced
  • 2 cups of broccoli florets
  • 200g cheese, grated
  • 2 tablespoons butter
  • Salt and pepper to taste

Instructions:

  1. Preheat the oven to 180°C (350°F).
  2. In a saucepan, melt the butter over medium heat and sauté the onion and garlic until translucent.
  3. Add the sliced carrots and diced potatoes, cooking for about 5 minutes until slightly softened.
  4. Stir in the broccoli florets, seasoning with salt and pepper. Cook for another 5 minutes.
  5. Transfer the vegetable mixture to a baking dish and sprinkle the grated cheese evenly on top.
  6. Bake in the preheated oven for about 25-30 minutes, or until the cheese is melted and golden brown.
  7. Let it cool for a few minutes before serving.
