Ingredients:

  • 300g potato
  • 200g carrot
  • 150g zucchini
  • 100g cheese
  • 50g butter
  • 250ml milk
  • 1 onion

Instructions:

  1. Preheat the oven to 180°C.
  2. Peel and dice the potatoes and carrots, and slice the zucchini.
  3. In a pot, boil the diced potatoes and carrots until they are soft, then drain.
  4. In a saucepan, melt the butter and sauté the chopped onion until translucent.
  5. Add milk to the saucepan and bring to a gentle simmer, then stir in the cheese until melted and smooth.
  6. Mix the boiled potatoes, carrots, and raw zucchini into the cheese sauce until well-coated.
  7. Pour the mixture into a greased baking dish and top with breadcrumbs if desired.
  8. Bake for 25-30 minutes until the top is golden and bubbly.
