Cheesy Vegetable and Chicken Bake
A delicious and hearty casserole packed with vegetables and tender chicken, topped with melted cheese for a comforting meal.
Ingredients:
- 300g chicken breast
- 200g broccoli
- 200g carrot
- 200g cheese
- 2 cloves garlic
- 1 onion
- 2 tablespoons butter
- 200ml milk
- salt
- pepper
Instructions:
- Preheat the oven to 180°C.
- In a large pot, bring water to boil and blanch broccoli and diced carrots for 3-5 minutes.
- In a skillet, melt butter over medium heat. Add chopped onion and minced garlic, cooking until softened.
- Add chicken breasts to the skillet and cook until no longer pink, seasoning with salt and pepper.
- Once the chicken is cooked, combine it with the blanched vegetables in a baking dish.
- Pour milk over the mixture and stir to combine.
- Top with grated cheese evenly over the casserole.
- Bake in the preheated oven for 25-30 minutes or until the cheese is bubbly and golden.
