Cheesy Vegetable and Chicken Bake

A delightful casserole featuring wholesome chicken and an array of fresh vegetables, topped with a creamy cheese sauce. Perfect for a hearty family meal!

Ingredients:

  • 500g chicken breast
  • 200g broccoli
  • 150g carrot
  • 100g cheese
  • 200ml milk
  • 2 cloves garlic
  • 300g potato
  • 1 onion
  • 50g butter
  • salt and pepper to taste

Instructions:

  1. Preheat the oven to 180°C (350°F).
  2. In a large pot, bring salted water to a boil and cook the potatoes until tender. Drain and mash them with butter, salt, and pepper.
  3. In a skillet, sauté chopped onion and garlic in a little butter until soft.
  4. Add diced chicken breast to the skillet and cook until browned and cooked through.
  5. Stir in the chopped broccoli and grated carrot, cooking for an additional 5 minutes until vegetables are tender.
  6. In a baking dish, layer the chicken and vegetable mixture, followed by the mashed potatoes on top.
  7. Pour milk over the entire dish and sprinkle with cheese.
  8. Bake in the preheated oven for 30-35 minutes or until the top is golden and bubbly.
