Cheesy Spinach and Mushroom Stuffed Potato Skins

Delicious potato skins stuffed with cheesy spinach and mushrooms, perfect as a savory snack or appetizer. Easy to prepare and irresistible!

Ingredients:

  • 4 large potatoes
  • 200 g spinach
  • 150 g mushrooms
  • 100 g cheese
  • 2 cloves garlic
  • 2 tbsp olive oil
  • Salt to taste
  • Pepper to taste

Instructions:

  1. Preheat your oven to 200°C (400°F).
  2. Wash the potatoes and pierce them with a fork several times. Bake in the oven for about 45-60 minutes or until tender.
  3. While the potatoes are baking, heat olive oil in a skillet over medium heat. Add minced garlic and sauté until fragrant.
  4. Add chopped mushrooms to the skillet and cook until they are browned.
  5. Stir in the spinach and cook until wilted. Season the mixture with salt and pepper. Remove from heat and set aside.
  6. Once the potatoes are done, let them cool slightly. Cut them in half lengthwise and scoop out some of the flesh to make room for the filling.
  7. Mix the spinach and mushroom mixture with grated cheese.
  8. Stuff the potato halves with the cheesy spinach and mushroom mixture, topping them with any remaining cheese.
  9. Return the stuffed potatoes to the oven and bake for an additional 10-15 minutes until the cheese is melted and bubbly.
