Cheesy Spinach and Mushroom Stuffed Potato Skins
Delicious potato skins stuffed with cheesy spinach and mushrooms, perfect as a savory snack or appetizer. Easy to prepare and irresistible!
Ingredients:
- 4 large potatoes
- 200 g spinach
- 150 g mushrooms
- 100 g cheese
- 2 cloves garlic
- 2 tbsp olive oil
- Salt to taste
- Pepper to taste
Instructions:
- Preheat your oven to 200°C (400°F).
- Wash the potatoes and pierce them with a fork several times. Bake in the oven for about 45-60 minutes or until tender.
- While the potatoes are baking, heat olive oil in a skillet over medium heat. Add minced garlic and sauté until fragrant.
- Add chopped mushrooms to the skillet and cook until they are browned.
- Stir in the spinach and cook until wilted. Season the mixture with salt and pepper. Remove from heat and set aside.
- Once the potatoes are done, let them cool slightly. Cut them in half lengthwise and scoop out some of the flesh to make room for the filling.
- Mix the spinach and mushroom mixture with grated cheese.
- Stuff the potato halves with the cheesy spinach and mushroom mixture, topping them with any remaining cheese.
- Return the stuffed potatoes to the oven and bake for an additional 10-15 minutes until the cheese is melted and bubbly.
