Cheesy Eggplant Bake

A delicious and hearty main course featuring layers of eggplant, tomato, and cheese, baked to perfection with a hint of garlic.

Ingredients:

  • 2 medium eggplants, sliced
  • 3 large tomatoes, sliced
  • 200 grams of cheese (mozzarella or any preferred type), grated
  • 3 cloves of garlic, minced
  • 50 ml of olive oil
  • Salt and pepper to taste
  • Fresh basil leaves for garnish

Instructions:

  1. Preheat the oven to 180°C (350°F).
  2. In a large baking dish, layer half of the eggplant slices at the bottom.
  3. Sprinkle half of the minced garlic over the eggplant, followed by half of the sliced tomatoes.
  4. Add half of the grated cheese on top of the tomatoes.
  5. Drizzle a little olive oil and season with salt and pepper.
  6. Repeat the layering with the remaining eggplant, garlic, tomatoes, and cheese.
  7. Finish with a drizzle of olive oil on top.
  8. Cover the baking dish with aluminum foil and bake for 30 minutes.
  9. Remove the foil and bake for an additional 15-20 minutes until the cheese is bubbly and golden brown.
  10. Remove from the oven and let it cool slightly before serving.
  11. Garnish with fresh basil leaves before serving.
