Ingredients:
- 2 medium eggplants, sliced
- 3 large tomatoes, sliced
- 200 grams of cheese (mozzarella or any preferred type), grated
- 3 cloves of garlic, minced
- 50 ml of olive oil
- Salt and pepper to taste
- Fresh basil leaves for garnish
Instructions:
- Preheat the oven to 180°C (350°F).
- In a large baking dish, layer half of the eggplant slices at the bottom.
- Sprinkle half of the minced garlic over the eggplant, followed by half of the sliced tomatoes.
- Add half of the grated cheese on top of the tomatoes.
- Drizzle a little olive oil and season with salt and pepper.
- Repeat the layering with the remaining eggplant, garlic, tomatoes, and cheese.
- Finish with a drizzle of olive oil on top.
- Cover the baking dish with aluminum foil and bake for 30 minutes.
- Remove the foil and bake for an additional 15-20 minutes until the cheese is bubbly and golden brown.
- Remove from the oven and let it cool slightly before serving.
- Garnish with fresh basil leaves before serving.
