Cheesy Chicken and Potato Bake
A comforting and hearty casserole featuring tender chicken, potatoes, and a cheesy topping.
Ingredients:
- 500 g chicken breast
- 800 g potatoes
- 1 large onion
- 200 g cheese
- 2 tablespoons olive oil
- Salt to taste
- Pepper to taste
Instructions:
- Preheat the oven to 200°C.
- Peel and dice the potatoes into small cubes. Boil them in salted water for about 10 minutes or until they are just tender, then drain and set aside.
- In a frying pan, heat the olive oil over medium heat. Chop the onion and sauté it until golden brown.
- Cut the chicken breast into cubes and add it to the frying pan. Cook until the chicken is browned and cooked through. Season with salt and pepper to taste.
- In a large baking dish, combine the boiled potatoes and cooked chicken and onion mixture. Mix well.
- Grate the cheese and sprinkle it evenly over the top of the chicken and potato mixture.
- Bake in the preheated oven for 20-25 minutes, or until the cheese is melted and bubbly.
