Cheesy Broccoli and Mushroom Casserole

A comforting and hearty broccoli and mushroom casserole baked to perfection with cheese, making it a delight for the whole family.

Ingredients:

  • 250g broccoli, chopped
  • 200g mushrooms, sliced
  • 1 onion, chopped
  • 300g cheese, grated
  • 200ml milk
  • 50g butter
  • 200g rice
  • 1 teaspoon garlic, minced
  • Salt and pepper to taste

Instructions:

  1. Preheat the oven to 180°C.
  2. In a pot, cook the rice according to package instructions, then drain and set it aside.
  3. In a large skillet, melt the butter over medium heat. Add the chopped onion and minced garlic; sauté until the onion becomes translucent.
  4. Add the sliced mushrooms to the skillet and cook until they are tender and browned.
  5. Stir in the chopped broccoli and cook for an additional 3-4 minutes, until the broccoli is slightly tender.
  6. In a large mixing bowl, combine the cooked rice, vegetable mixture, milk, and half of the grated cheese. Mix well and season with salt and pepper.
  7. Transfer the mixture to a greased baking dish and spread it evenly.
  8. Top with the remaining cheese and cover with aluminum foil.
  9. Bake in the preheated oven for 20 minutes, then remove the foil and bake for an additional 10 minutes, or until the cheese is bubbly and golden brown.
