Cheesy Broccoli and Mushroom Casserole
A comforting and hearty broccoli and mushroom casserole baked to perfection with cheese, making it a delight for the whole family.
Ingredients:
- 250g broccoli, chopped
- 200g mushrooms, sliced
- 1 onion, chopped
- 300g cheese, grated
- 200ml milk
- 50g butter
- 200g rice
- 1 teaspoon garlic, minced
- Salt and pepper to taste
Instructions:
- Preheat the oven to 180°C.
- In a pot, cook the rice according to package instructions, then drain and set it aside.
- In a large skillet, melt the butter over medium heat. Add the chopped onion and minced garlic; sauté until the onion becomes translucent.
- Add the sliced mushrooms to the skillet and cook until they are tender and browned.
- Stir in the chopped broccoli and cook for an additional 3-4 minutes, until the broccoli is slightly tender.
- In a large mixing bowl, combine the cooked rice, vegetable mixture, milk, and half of the grated cheese. Mix well and season with salt and pepper.
- Transfer the mixture to a greased baking dish and spread it evenly.
- Top with the remaining cheese and cover with aluminum foil.
- Bake in the preheated oven for 20 minutes, then remove the foil and bake for an additional 10 minutes, or until the cheese is bubbly and golden brown.
