Cheesy Beef and Herb Stuffed Bell Peppers

Stuffed bell peppers filled with a savory mixture of ground beef, garlic, onions, rice (optional), and herbs, topped with melted cheese and garnished with fresh parsley.

Ingredients:

  • 4 large bell peppers (any color)
  • 1 lb ground beef
  • 1 cup shredded cheese (cheddar or your choice)
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1 cup cooked rice (optional)
  • Salt and pepper to taste
  • 1 tablespoon olive oil
  • Fresh parsley for garnish

Instructions:

  1. Preheat your oven to 375°F (190°C).
  2. Wash the bell peppers, slice the tops off, and remove the seeds. Set them aside.
  3. In a large skillet, heat olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  4. Add the minced garlic and ground beef to the skillet. Season with salt, pepper, oregano, and basil. Cook until the beef is browned and fully cooked, breaking it apart with a spatula.
  5. Once the beef is cooked, stir in the cooked rice (if using) and half of the shredded cheese, mixing well.
  6. Stuff each bell pepper with the beef and cheese mixture, pressing down gently to fill them completely.
  7. Arrange the stuffed peppers upright in a baking dish. Sprinkle the remaining cheese on top of each pepper.
  8. Cover the dish with aluminum foil and bake for 25 minutes. Then remove the foil and bake for an additional 10-15 minutes, or until the cheese is bubbly and golden brown.
  9. Remove from the oven, let cool slightly, and garnish with fresh parsley before serving.
