Cheesy Beef and Herb Stuffed Bell Peppers
Stuffed bell peppers filled with a savory mixture of ground beef, garlic, onions, rice (optional), and herbs, topped with melted cheese and garnished with fresh parsley.
Ingredients:
- 4 large bell peppers (any color)
- 1 lb ground beef
- 1 cup shredded cheese (cheddar or your choice)
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- 1 cup cooked rice (optional)
- Salt and pepper to taste
- 1 tablespoon olive oil
- Fresh parsley for garnish
Instructions:
- Preheat your oven to 375°F (190°C).
- Wash the bell peppers, slice the tops off, and remove the seeds. Set them aside.
- In a large skillet, heat olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
- Add the minced garlic and ground beef to the skillet. Season with salt, pepper, oregano, and basil. Cook until the beef is browned and fully cooked, breaking it apart with a spatula.
- Once the beef is cooked, stir in the cooked rice (if using) and half of the shredded cheese, mixing well.
- Stuff each bell pepper with the beef and cheese mixture, pressing down gently to fill them completely.
- Arrange the stuffed peppers upright in a baking dish. Sprinkle the remaining cheese on top of each pepper.
- Cover the dish with aluminum foil and bake for 25 minutes. Then remove the foil and bake for an additional 10-15 minutes, or until the cheese is bubbly and golden brown.
- Remove from the oven, let cool slightly, and garnish with fresh parsley before serving.
