Ingredients:

  • 300g grated carrots
  • 250g flour
  • 200g sugar
  • 3 eggs
  • 200g cream cheese
  • 100g butter
  • 1 tsp baking powder
  • 1 tsp vanilla extract
  • 100g chopped walnuts or pecans (optional)

Instructions:

  1. Preheat the oven to 175°C (350°F).
  2. In a mixing bowl, combine the grated carrots, flour, sugar, and baking powder.
  3. In another bowl, beat the eggs and add the vanilla extract and melted butter; mix well.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined. Fold in the chopped nuts if using.
  5. Grease and flour a round cake pan, then pour in the batter evenly.
