Delicious and moist carrot cake muffins made with fresh carrots for a healthy and satisfying dessert. Perfect for snacking or as a quick breakfast option!

Ingredients:

  • 250g grated carrots
  • 100g flour
  • 80g sugar
  • 2 eggs
  • 100ml oil
  • 1 tsp cinnamon
  • 1 tsp baking powder

Instructions:

  1. Preheat your oven to 180°C (350°F) and line a muffin tin with liners.
  2. In a large mixing bowl, whisk together the flour, sugar, and cinnamon.
  3. In another bowl, beat the eggs and oil together until combined.
  4. Add the grated carrots to the egg mixture and stir well.
  5. Combine the wet and dry ingredients until just mixed.
  6. Spoon the batter into the prepared muffin tin, filling each about 2/3 full.
  7. Bake for 20-25 minutes or until a toothpick comes out clean.
  8. Let cool on a wire rack before serving.
