Ingredients:
- 200g flour
- 150g sugar
- 150g grated carrot
- 2 eggs
- 100ml olive oil
- 1 tsp baking powder
- 1 tsp cinnamon
- 1/2 tsp nutmeg
- 1/2 tsp salt
Instructions:
- Preheat the oven to 180°C (350°F).
- In a large bowl, mix together flour, sugar, baking powder, cinnamon, nutmeg, and salt.
- In another bowl, whisk together the eggs and olive oil until well combined.
- Add the grated carrots to the wet ingredients and mix well.
- Combine the wet and dry ingredients and stir until just combined; do not overmix.
- Spoon the batter into a greased muffin tin, filling each cup about 2/3 full.
- Bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean.
- Allow to cool slightly before serving.
