Carrot Cake Muffins

Deliciously moist and fluffy carrot cake muffins made with fresh carrots, sugar, and flavored with warm spices. Perfect for dessert or a sweet snack!

Ingredients:

  • 200g flour
  • 150g sugar
  • 150g grated carrot
  • 2 eggs
  • 100ml olive oil
  • 1 tsp baking powder
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/2 tsp salt

Instructions:

  1. Preheat the oven to 180°C (350°F).
  2. In a large bowl, mix together flour, sugar, baking powder, cinnamon, nutmeg, and salt.
  3. In another bowl, whisk together the eggs and olive oil until well combined.
  4. Add the grated carrots to the wet ingredients and mix well.
  5. Combine the wet and dry ingredients and stir until just combined; do not overmix.
  6. Spoon the batter into a greased muffin tin, filling each cup about 2/3 full.
  7. Bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean.
  8. Allow to cool slightly before serving.
