Carrot Cake Muffins

Deliciously moist carrot cake muffins made with wholesome ingredients, perfect for a sweet treat or breakfast!

Ingredients:

  • 200g flour
  • 150g sugar
  • 2 large eggs
  • 200g grated carrot
  • 100ml milk
  • 100g butter

Instructions:

  1. Preheat the oven to 180°C (350°F) and line a muffin tin with paper liners.
  2. In a large bowl, mix together the flour and sugar.
  3. Add the grated carrot to the flour mixture and stir well.
  4. In another bowl, beat the eggs and combine with melted butter and milk.
  5. Pour the wet ingredients into the dry mixture and stir until just combined.
  6. Spoon the batter into the prepared muffin tin, filling each cup about 2/3 full.
  7. Bake for 20-25 minutes, or until a toothpick comes out clean from the center.
  8. Allow to cool for a few minutes before transferring to a wire rack to cool completely.
