Ingredients:
- 200g flour
- 150g sugar
- 2 large eggs
- 200g grated carrot
- 100ml milk
- 100g butter
Instructions:
- Preheat the oven to 180°C (350°F) and line a muffin tin with paper liners.
- In a large bowl, mix together the flour and sugar.
- Add the grated carrot to the flour mixture and stir well.
- In another bowl, beat the eggs and combine with melted butter and milk.
- Pour the wet ingredients into the dry mixture and stir until just combined.
- Spoon the batter into the prepared muffin tin, filling each cup about 2/3 full.
- Bake for 20-25 minutes, or until a toothpick comes out clean from the center.
- Allow to cool for a few minutes before transferring to a wire rack to cool completely.
