Carrot Cake Muffins

Delight in these moist and flavorful carrot cake muffins made with fresh carrots and a hint of sweetness. They're perfect for breakfast or as a snack!

Ingredients:

  • 200g flour
  • 100g sugar
  • 150g grated carrot
  • 2 eggs
  • 100ml milk
  • 50g butter

Instructions:

  1. Preheat the oven to 180°C and line a muffin tin with paper liners.
  2. In a large bowl, combine the flour and sugar.
  3. Add the grated carrot and mix well.
  4. In a separate bowl, beat the eggs and then add the milk and melted butter.
  5. Pour the wet ingredients into the dry ingredients and stir until just combined.
  6. Spoon the batter into the muffin tin, filling each liner about 2/3 full.
  7. Bake for 20-25 minutes or until a toothpick inserted into the center comes out clean.
  8. Let cool before serving.
