Carrot Cake Muffins

Deliciously moist and sweet Carrot Cake Muffins made with simple ingredients, perfect for dessert or a snack.

Ingredients:

  • 200g flour
  • 150g sugar
  • 2 eggs
  • 150g grated carrot
  • 100g butter

Instructions:

  1. Preheat the oven to 180°C and line a muffin tray with muffin liners.
  2. In a large bowl, mix the flour and sugar together until combined.
  3. In a separate bowl, beat the eggs and melt the butter, then add to the flour and sugar mixture, mixing until well combined.
  4. Stir in the grated carrot until evenly distributed throughout the batter.
  5. Spoon the mixture evenly into the prepared muffin tray, filling each liner about 2/3 full.
  6. Bake in the preheated oven for 20-25 minutes, or until a toothpick inserted into the center comes out clean.
  7. Let the muffins cool in the tray for 5 minutes, then transfer to a wire rack to cool completely.
