Carrot Cake Muffins

Delicious and moist carrot cake muffins, perfect for dessert or as a snack. Made with natural sweetness from carrots and a touch of spice, these muffins are sure to please your taste buds!

Ingredients:

  • 200g flour
  • 150g sugar
  • 2 eggs
  • 300g grated carrot
  • 100ml vegetable oil
  • 1 tsp baking powder
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/2 tsp salt

Instructions:

  1. Preheat the oven to 180°C (350°F) and line a muffin tray with paper liners.
  2. In a bowl, mix the grated carrots with sugar and eggs until well combined.
  3. Add the flour, baking powder, cinnamon, nutmeg, and salt to the mixture, stirring until smooth.
  4. Pour the batter into the muffin liners, filling each about 2/3 full.
  5. Bake in the preheated oven for 20-25 minutes or until a toothpick comes out clean.
  6. Allow to cool on a wire rack before serving.
