Carrot Cake Muffins

Delicious and moist carrot cake muffins made with carrots, flour, sugar, and eggs, perfect for a sweet treat or dessert.

Ingredients:

  • 200g flour
  • 150g sugar
  • 2 eggs
  • 200g carrot

Instructions:

  1. Preheat your oven to 180°C (350°F) and line a muffin tin with paper liners.
  2. In a large bowl, combine the flour and sugar.
  3. Grate the carrots and add them to the bowl with the flour and sugar.
  4. Crack the eggs into the mixture and stir until well combined.
  5. Spoon the mixture into the muffin tin, filling each cup about 2/3 full.
  6. Bake in the preheated oven for 20-25 minutes, or until a toothpick inserted into the center comes out clean.
  7. Let the muffins cool in the tin for 5 minutes, then transfer to a wire rack to cool completely.
