Ingredients:

  • 200g flour
  • 150g sugar
  • 2 medium carrots, grated
  • 100ml milk
  • 2 eggs
  • 100g butter, melted
  • 1 tsp baking powder
  • 1 tsp cinnamon

Instructions:

  1. Preheat the oven to 180°C (350°F) and line a muffin tray with paper liners.
  2. In a large bowl, mix the flour, sugar, baking powder, and cinnamon together until well combined.
  3. In another bowl, whisk the eggs and then add the melted butter and milk, mixing well.
  4. Gradually pour the wet ingredients into the dry ingredients, stirring gently until just combined.
  5. Fold in the grated carrots until evenly distributed.
  6. Spoon the batter into the muffin liners, filling each about 2/3 full.
  7. Bake for 20-25 minutes or until a toothpick inserted into the center comes out clean.
  8. Allow the muffins to cool in the tray for 5 minutes, then transfer them to a wire rack to cool completely.
