Ingredients:

  • 200g flour
  • 150g sugar
  • 3 large eggs
  • 250g grated carrot
  • 100g butter
  • 1 tsp baking powder
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 100g cream

Instructions:

  1. Preheat the oven to 180°C (350°F).
  2. In a mixing bowl, beat together the butter and sugar until creamy.
  3. Add the eggs one at a time, mixing well after each addition.
  4. Sift in the flour, baking powder, cinnamon, and nutmeg, then gently fold in the grated carrots.
  5. Pour the batter into a greased cake tin and bake for 30-35 minutes or until a toothpick comes out clean.
  6. Allow the cake to cool before frosting with whipped cream.
