A deliciously moist carrot cake made with fresh carrots and topped with a creamy frosting. This dessert balances sweetness with a hint of spice, perfect for any occasion.

Ingredients:

  • 250g flour
  • 200g sugar
  • 3 large eggs
  • 300g grated carrot
  • 100ml sunflower oil
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp cinnamon
  • 100g cream cheese
  • 50g butter

Instructions:

  1. Preheat the oven to 180°C and grease a cake pan.
  2. In a large mixing bowl, whisk together the flour, sugar, baking powder, baking soda, and cinnamon.
  3. In another bowl, beat the eggs and mix in the sunflower oil and grated carrots.
  4. Combine the wet ingredients with the dry ingredients and stir until just combined.
  5. Pour the batter into the prepared cake pan and bake for 30-35 minutes, or until a toothpick comes out clean.
  6. Once baked, let the cake cool completely.
  7. For the frosting, beat the cream cheese and butter together until smooth. Spread over the cooled cake.
  8. (Optional) Garnish with grated carrot or nuts if desired.
