Carrot Cake

Deliciously moist and sweet carrot cake made with fresh carrots and topped with cream cheese frosting. Perfect for any dessert lover!

Ingredients:

  • 250g flour
  • 200g sugar
  • 300g grated carrot
  • 3 eggs
  • 150ml vegetable oil
  • 1 tsp baking powder
  • 1 tsp cinnamon
  • 200g cream cheese
  • 50g butter
  • 100g powdered sugar
  • 1 tsp vanilla extract

Instructions:

  1. Preheat your oven to 180°C and grease a round cake pan.
  2. In a large bowl, combine the grated carrots, flour, sugar, eggs, and vegetable oil. Mix until well combined.
  3. Add the baking powder and cinnamon to the mixture and stir until fully incorporated.
  4. Pour the batter into the prepared cake pan and smooth the top.
  5. Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean.
  6. Let the cake cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely.
  7. While the cake is cooling, prepare the frosting by beating together the cream cheese, butter, powdered sugar, and vanilla extract until smooth and creamy.
  8. Once the cake is completely cooled, spread the cream cheese frosting evenly over the top and sides of the cake.
  9. Slice and serve. Enjoy your delicious carrot cake!
