Ingredients:

  • 200g flour
  • 200g sugar
  • 300g grated carrot
  • 100g butter
  • 3 eggs
  • 1 tsp baking powder
  • 1 tsp cinnamon
  • 1/2 cup milk
  • 200g cream cheese

Instructions:

  1. Preheat the oven to 180°C.
  2. In a bowl, cream together the butter and sugar until light and fluffy.
  3. Beat in the eggs, one at a time, mixing well after each addition.
  4. Stir in the grated carrot.
  5. In another bowl, combine the flour, baking powder, and cinnamon.
  6. Gradually add the dry ingredients to the wet mixture, alternating with milk until well combined.
  7. Pour the batter into a greased cake tin and bake for 30-35 minutes, or until a toothpick comes out clean.
  8. Allow to cool before frosting with cream cheese frosting.
