Carrot Cake

Delicious and moist carrot cake made with fresh carrots, spiced with cinnamon, and topped with cream cheese frosting, perfect for any dessert occasion.

Ingredients:

  • 200g flour
  • 200g sugar
  • 3 eggs
  • 250g grated carrot
  • 100g butter
  • 1 tsp baking powder
  • 1 tsp cinnamon
  • 200g cream cheese
  • 100g yogurt

Instructions:

  1. Preheat your oven to 180°C and grease a round cake pan.
  2. In a large bowl, cream together the butter and sugar until light and fluffy.
  3. Beat in the eggs one at a time, then stir in the grated carrot.
  4. In another bowl, combine the flour, baking powder, and cinnamon.
  5. Gradually add the dry ingredients to the carrot mixture, mixing until combined.
  6. Pour the batter into the prepared cake pan and smooth the top.
  7. Bake for 30-35 minutes or until a toothpick inserted in the center comes out clean.
  8. Let the cake cool completely before frosting.
  9. For the frosting, beat together the cream cheese and yogurt until smooth and creamy, then spread over the cooled cake.
