Ingredients:

  • 200g all-purpose flour
  • 100g grated carrot
  • 100g grated zucchini
  • 2 eggs
  • 75g sugar
  • 100ml milk
  • 50g melted butter
  • 1 tsp baking powder
  • 1/2 tsp salt

Instructions:

  1. Preheat your oven to 180°C (350°F) and grease a loaf pan.
  2. In a mixing bowl, combine the grated carrot and zucchini.
  3. In another bowl, whisk together the eggs, milk, and melted butter.
  4. Add the sugar to the wet mixture and stir until combined.
  5. In a separate bowl, mix the flour, baking powder, and salt.
  6. Gradually add the dry ingredients to the wet mixture, stirring until just combined.
  7. Fold in the grated carrot and zucchini until evenly distributed.
  8. Pour the batter into the greased loaf pan and smooth the top.
  9. Bake in the preheated oven for 45-50 minutes, or until a toothpick inserted into the center comes out clean.
  10. Allow the bread to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
