Carrot and Zucchini Bread

A moist and flavorful bread made with grated carrots and zucchini, perfect for a wholesome snack or breakfast.

Ingredients:

  • 200g flour
  • 100g grated carrot
  • 100g grated zucchini
  • 2 eggs
  • 100ml sunflower oil
  • 100g sugar
  • 1 tsp baking powder
  • 1/2 tsp salt

Instructions:

  1. Preheat the oven to 180°C (350°F) and grease a loaf pan.
  2. In a bowl, combine the flour, baking powder, and salt.
  3. In another bowl, whisk the eggs, then add the sugar and sunflower oil, mixing until well combined.
  4. Stir in the grated carrot and zucchini until evenly distributed.
  5. Gradually add the dry ingredients to the wet ingredients, stirring until just mixed.
  6. Pour the batter into the prepared loaf pan and smooth the top.
  7. Bake in the preheated oven for 45-50 minutes, or until a toothpick inserted into the center comes out clean.
  8. Let the bread cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
