A delightful and moist carrot and orange cake, sweetened naturally with honey and bursting with citrus flavor, perfect for dessert lovers.

Ingredients:

  • 250g grated carrots
  • 200g all-purpose flour
  • 150g sugar
  • 3 eggs
  • 100ml oil
  • 2 oranges (zest and juice)
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1/2 tsp cinnamon
  • honey to drizzle

Instructions:

  1. Preheat your oven to 180°C (350°F). Grease and flour a loaf pan.
  2. In a large bowl, combine the grated carrots, sugar, and eggs. Mix well until combined.
  3. In another bowl, whisk together the flour, baking powder, salt, and cinnamon.
  4. Gradually add the dry ingredients to the carrot mixture, mixing until just combined.
  5. Add the orange zest and juice, along with the oil, and mix until smooth.
  6. Pour the batter into the prepared loaf pan and bake for 45-50 minutes, or until a toothpick inserted in the center comes out clean.
  7. Let the cake cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
  8. Drizzle with honey before serving.
