This Carrot and Apple Cake is a delightful dessert that combines the natural sweetness of carrots and apples with warm spices. Perfect for any occasion, it's moist, flavorful, and topped with a cream cheese frosting!

Ingredients:

  • 200g all-purpose flour
  • 150g sugar
  • 2 large eggs
  • 150g grated carrots
  • 150g grated apple
  • 100ml milk
  • 100g butter
  • 1 tsp baking powder
  • 1 tsp ground cinnamon
  • 1/2 tsp salt

Instructions:

  1. Preheat your oven to 180°C (350°F). Grease and flour a cake pan.
  2. In a large mixing bowl, cream together the butter and sugar until light and fluffy.
  3. Add the eggs one at a time, mixing well after each addition.
  4. Stir in the grated carrots and grated apple until evenly combined.
  5. In a separate bowl, mix the flour, baking powder, cinnamon, and salt. Gradually add this dry mixture to the wet ingredients, alternating with the milk, and mix until just combined.
  6. Pour the batter into the prepared cake pan and smooth the top.
  7. Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
  8. Let the cake cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
  9. Once cooled, frost with your favorite cream cheese frosting if desired, and serve.
