Avocado Surimi Salad

A light and refreshing salad featuring creamy avocado and savory surimi, perfect for a quick meal or appetizer.

Ingredients:

  • 200g avocado
  • 150g surimi (imitation crab)
  • 100g cherry tomatoes
  • 50g cucumber
  • 30g red onion
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • Salt to taste
  • Black pepper to taste
  • Fresh parsley for garnish

Instructions:

  1. Cut the avocado in half, remove the pit, and scoop the flesh into a bowl. Mash it slightly with a fork.
  2. Chop the surimi into bite-sized pieces and add it to the bowl with the avocado.
  3. Halve the cherry tomatoes and chop the cucumber into small pieces. Add these to the bowl.
  4. Finely chop the red onion and add it as well.
  5. In a small bowl, whisk together the olive oil, lemon juice, salt, and black pepper.
  6. Pour the dressing over the salad and gently mix everything together until well combined.
  7. Garnish with fresh parsley before serving.
