Avocado Shrimp Frittata

A delicious and healthy frittata made with creamy avocado, succulent shrimp, and eggs, finished with a hint of lime for freshness.

Ingredients:

  • 2 ripe avocados
  • 4 large eggs
  • 200 grams shrimp (peeled and deveined)
  • 1 lime (juiced)
  • Salt to taste
  • Pepper to taste
  • 1 tablespoon olive oil

Instructions:

  1. Preheat the oven to 180°C (350°F).
  2. In a skillet, heat the olive oil over medium heat. Add the shrimp and cook until pink and cooked through, about 4-5 minutes. Remove from heat and set aside.
  3. In a bowl, mash one of the avocados and mix in the lime juice, salt, and pepper.
  4. Whisk the eggs in another bowl until well beaten.
  5. Add the shrimp to the eggs and stir until combined.
  6. In an oven-safe skillet, pour the egg and shrimp mixture. Cook on the stove for about 2-3 minutes until the edges start to set.
  7. Slice the remaining avocado and arrange on top of the frittata.
  8. Transfer the skillet to the preheated oven and bake for about 15-20 minutes, or until the frittata is puffed up and cooked through.
  9. Remove from the oven, let it cool slightly, cut into wedges, and serve.
