This Avocado and Veggie Wrap is a fresh and healthy sandwich option filled with vibrant vegetables and creamy avocado. Perfect for a quick lunch or a light dinner!

Ingredients:

  • 1 whole wheat tortilla
  • 1 ripe avocado
  • 1 medium carrot, grated
  • 1 small cucumber, sliced
  • 1 cup spinach leaves
  • 1/2 bell pepper, sliced
  • Salt and pepper to taste
  • Lemon juice for seasoning

Instructions:

  1. Start by preparing all the vegetables. Grate the carrot, slice the cucumber and bell pepper, and wash the spinach leaves thoroughly.
  2. In a bowl, mash the ripe avocado and season it with a pinch of salt, pepper, and a squeeze of lemon juice.
  3. Lay the whole wheat tortilla flat on a clean surface. Spread the mashed avocado evenly over the tortilla.
  4. Arrange the grated carrot, sliced cucumber, spinach leaves, and sliced bell pepper on top of the avocado spread.
  5. Carefully roll the tortilla tightly, starting from one edge, to create a wrap. Make sure all the fillings are secured inside.
  6. Slice the wrap in half diagonally and serve immediately or wrap it in parchment paper for a meal on the go.
