Avocado and Chickpea Wrap

A delicious and healthy wrap filled with creamy avocado and protein-rich chickpeas, perfect for a quick lunch.

Ingredients:

  • 4 large whole wheat tortillas
  • 2 ripe avocados
  • 1 can chickpeas, drained and rinsed
  • 1 medium cucumber, diced
  • 1 small red onion, finely chopped
  • 2 cups spinach leaves
  • Salt and pepper to taste
  • Lemon juice
  • Olive oil

Instructions:

  1. In a bowl, mash the avocados and mix in lemon juice, salt, and pepper.
  2. In another bowl, combine the chickpeas, diced cucumber, chopped onion, and spinach leaves.
  3. Spread the avocado mash onto each tortilla.
  4. Evenly distribute the chickpea mixture onto the tortillas, and wrap tightly.
  5. Slice in half and serve immediately.
