Avocado and Chickpea Wrap
A delicious and healthy wrap filled with creamy avocado and protein-rich chickpeas, perfect for a quick lunch.
Ingredients:
- 4 large whole wheat tortillas
- 2 ripe avocados
- 1 can chickpeas, drained and rinsed
- 1 medium cucumber, diced
- 1 small red onion, finely chopped
- 2 cups spinach leaves
- Salt and pepper to taste
- Lemon juice
- Olive oil
Instructions:
- In a bowl, mash the avocados and mix in lemon juice, salt, and pepper.
- In another bowl, combine the chickpeas, diced cucumber, chopped onion, and spinach leaves.
- Spread the avocado mash onto each tortilla.
